•    2 chicken breasts or thighs (skinless)
•    2 potatoes cubed and peeled
•    2 cups rice uncooked
•    6 cups of water
•    3 halved and peeled carrots
•    1 sliced stalk of celery

Place the chicken into a large pot and pour over cold water. Tip in the potatoes, carrots, and celery into the pot, and include salt to taste. Now simmer for approximately 2 hours, or till the chicken is tender. Include the rice and cook at a low heat for an additional 25 minutes or until the rice has absorbed the liquid.
